Cook the meat well with some salt and pepper powder. Now grind the meat well in a mixer grinder. Boil the potatoes separately and mash it. Cut ginger, chilli, curry leaves and onion into very small pieces.
In pan pour oil add mustard. When it splutters, add onion, ginger green chilli, curry leaves and fry till the onion turns light brown. Add the masala powder and mix well. Remove from fire. Now add mashed potato, rusk powder and the ground meat and mix well. Add salt to taste. Make it into any shape in your palm or with a shaper.
Take only the white of the egg and beat it well.
Dip the cutlets in egg white and fry it in oil.
